Citral (CAS 141-27-5) is a naturally occurring acyclic monoterpenoid aldehyde and one of the most important lemon-character aroma compounds in flavor and fragrance formulation. Citral is a mixture of two geometric isomers — geranial (citral A) and neral (citral B) — occurring naturally at high concentrations in lemongrass oil, lemon myrtle, and other citrus-related essential oils. Citral is a pale yellow to yellow mobile liquid at room temperature with a powerful, intensely lemony odor — packaging and handling should account for its high odor intensity and light sensitivity.
