Natural vs. Synthetic Vanillin — Which Grade Do You Need?
Synthetic vanillin (produced from guaiacol or lignin) is chemically identical to the vanillin found in natural vanilla beans and is the standard grade for food, fragrance, and pharmaceutical applications. Natural vanillin (produced by bioconversion from ferulic acid or other natural precursors) carries "natural" designation under EU and US flavor regulations and commands a significant price premium — required where "natural flavor" labeling is mandatory or commercially expected.
